If you\’re a fan of Olive Garden, you probably know all about their famous Zuppa Toscana soup. As the restaurant\’s most popular soup, it\’s the epitome of a cult-favorite! However, it\’s totally possible to make this hearty dish in the comfort of your own home, and it\’s surprisingly easy to do. This will also allow you to customize the ingredients according to your preferences. Read on for a copycat recipe of Olive Garden\’s Zuppa Toscana soup.

Things You\’ll Need
1 pound Italian sausage
1 medium sweet onion, chopped
4 cloves fresh garlic, minced (or 2 tablespoons store-bought minced garlic)
6 cups low-sodium chicken broth
6 slices bacon, cooked and chopped
3 large Russet potatoes, peeled and cubed
1 cup heavy cream or half & half
3 cups kale, chopped
Salt and pepper, to taste
Oil (or bacon grease)
Parmesan cheese (optional)
Crushed red pepper flakes (optional)
The original soup is made with spicy Italian sausage, but you can also use sweet Italian sausage. The choice is yours!
Remove the sausage from the casing. In a pan over medium-high heat, cook the sausage until brown and no longer pink, about 5 to 7 minutes.
If you prefer turkey, feel free to use Italian turkey sausage instead. Cook it over medium-high heat with a bit of oil.
With a slotted spoon, transfer the sausage to a plate lined with a paper towel.
In a large pot over medium heat, add about 2 tablespoons of oil (or bacon grease). Add the onions and cook until slightly clear, about 5 to 7 minutes. Add the minced garlic and cook for another 1 to 2 minutes.
Add the chicken broth, potatoes, salt and pepper. Bring to a boil, then reduce to a simmer. Cook for 25 to 30 minutes or until the potatoes are tender and soft.
Add the kale and mix well. Cook until tender, about 5 to 7 minutes.
Instead of kale, you can also use spinach or your favorite leafy greens.
Finally, add the heavy cream, bacon and sausage. Mix well and cook for 5 to 7 minutes or until everything is heated through.
When it\’s time to serve your homemade Zuppa Toscana soup, top it with Parmesan cheese, chopped bacon or crushed red pepper flakes. Serve with your favorite bread. Enjoy!
