The recipe is essentially made of tiny, coin-sized pancakes that are eaten with a spoon. Eat them with milk or yogurt plus toppings like chopped fruit, maple syrup and butter. Things You\’ll Need
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon (optional)
1 tablespoon sugar
3/4 cup plant-based or dairy milk
1 tablespoon oil or melted butter plus more for frying
1 teaspoon vanilla extract
Fruits, mini chocolate chips, maple syrup and/or butter (for topping)
Milk or yogurt (optional)
In a bowl, combine all the dry ingredients.
Lightly beat the egg in a smaller separate bowl.
Combine the egg, milk, oil and vanilla. Whisk well.
Add the wet ingredients to the dry ingredients. Stir until the mixture forms a thick batter.
Transfer the batter to a squeeze bottle.
In a large skillet, warm 1 to 2 teaspoons oil or butter over low-medium heat. Squeeze mini circles of batter about the size of small coins. For slightly larger pancakes (about the size of a quarter), it may be easier to form each circle with a spiraling motion.
Cook for 2 to 3 minutes or until the pancakes form bubbles and set around the edges. Flip with a spatula and then cook for another 2 minutes. A mini spatula may be useful for this step.
You\’ll likely need to work in batches. To speed up the process, fry the pancakes on multiple pans at once. Just be sure to keep an eye on each batch.
Once they are golden brown and fluffy, the mini pancakes are ready to eat. Transfer them to a bowl and add milk if desired. Keep in mind that milk will make the pancakes soggy if they sit for too long, so you\’ll want to eat them immediately.
